Ingredients:
For the Pizza Dough:
👉 2 ¼ teaspoons (1
packet) active dry yeast
👉 1 ½ cups warm
water (110°F)
👉3 ½ - 4 cups
all-purpose flour
👉2 tablespoons
olive oil
👉 1 teaspoon sugar
👉1 teaspoon salt
👉 1 cup barbecue
sauce (your favorite brand or homemade)
👉 2 cups cooked
chicken breast, shredded or chopped
👉 1 ½ cups shredded
mozzarella cheese
👉 1 cup shredded
cheddar cheese
👉 1 small red onion,
thinly sliced
👉 1 small green bell
pepper, thinly sliced (optional)
👉 ½ cup fresh
cilantro, chopped (for garnish)
👉1 tablespoon olive
oil (for brushing the crust)
Instructions:
- In a large bowl,
dissolve the yeast and sugar in warm water. Let it sit for 5 minutes until it
becomes frothy.
- Add olive oil,
salt, and 3 ½ cups of flour to the yeast mixture. Mix until a dough forms.
- Knead the dough
on a floured surface for about 8-10 minutes, adding more flour as needed, until
the dough is smooth and elastic.
- Place the dough
in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm
place for 1- 1 ½ hours or until doubled in size.
- If not already
done, cook the chicken breast by grilling, baking, or sautéing until fully
cooked. Shred or chop the chicken into bite-sized pieces.
- Toss the cooked
chicken in ½ cup of barbecue sauce, ensuring it’s well-coated.
- Preheat your oven
to 475°F (245°C). If using a pizza stone, place it in the oven to heat.
- Once the dough
has risen, punch it down and divide it into two equal portions if making two
pizzas.
- Roll out the
dough on a floured surface to your desired thickness (about 12 inches in
diameter for each pizza).
- Transfer the
rolled dough onto a pizza peel or baking sheet sprinkled with cornmeal to
prevent sticking.
- Brush the edges
of the dough with olive oil for a golden crust.
- Spread the
remaining barbecue sauce evenly over the dough, leaving a small border around
the edges.
